Kulfi is the south Asian version of ice cream. The unique flavor of kulfi comes from the boiling process - where reactions between the milk sugars and milk proteins cause it to become caramelized.

This flavors the milk and reduces it to a fudgy mass which can be used as a 'plain' flavor, or more often, is enhanced with fruits, nuts and other flavorings then frozen around a stick.
